Brighton’s monthly £35 pop-up of top Sussex chefs – Meanwhile Mondays – goes experimental on Monday 12 June with ice cream maestro Seb Cole of Boho Gelato and Meanwhile’s head chef Ian Aungier.
The duo will be presenting three courses with each having a creative frozen element. It promises to be an exciting, never-to-be-repeated food event that guests will remember for years to come.
Diners can expect crab beignets, mango sweetcorn and lime sorbet with crispy parma ham and candied chilli to start, followed by roast cured free range pork, radicchio, chicory, orange salad, apple and fennel sorbet with hasselback Jersey Royal potatoes for the main.
Dessert is goats cheese ice cream, strawberry basil and black pepper sorbet on a puff pastry galette with a complimentary affogato pistachio ice cream hazel nut brittle shot of espresso to finish the supper.
Seb is a well-known face on the Sussex food scene having opened his iconic ice cream store in Pool Valley back in 2010. As well as making ice creams, Seb also regularly serves up sorbets and granitas with nearly 1,000 traditional and wild ’n’ wacky flavours in his ever-growing recipe book. With a passion for using local producers and suppliers wherever possible, you’ll find Boho Gelato products not only in Seb’s own stores but also in a multitude of restaurants, bars and hotels across the region including Shelter Hall and South Lodge.
Seb was part of the UK team at the European championships of the Gelato World Cup in Italy in January, and regularly participates in both national and international events to promote Boho Gelato and wider Sussex’s food offering.
Following an extensive career in top kitchens across London – Oxo Tower, Chez Bruce and Grain Store – and three years working in restaurants in Sydney, Ian Aungier joined My Hotels at their Paddington property before heading to Brighton to launch Meanwhile. Under Ian’s steering, Meanwhile can rightly claim to have one of the most locally sourced daytime menus in Sussex and – like Seb – is a keen supporter of the circular food economy.
Meanwhile Mondays run monthly at Meanwhile on Jubilee Street, Brighton. Menus are always priced at £35 per person for food, with chefs given complete freedom as to what their menu looks like. Previous guest chefs have included Simon Mckenzie and Angelica Food with Arissy Kitchen, Winchester’s Pulpo Negro, You Juice, Nanima Asian Kitchen and Momma Cherri confirmed for later this year.
